# Directions:

01 - In a medium mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract with an electric mixer until smooth and creamy.
02 - Stir in the graham cracker crumbs until fully incorporated into the mixture.
03 - Spread the mixture evenly, about 1/2 inch thick, on a baking sheet lined with parchment paper. Freeze for 1 hour until firm.
04 - Using a star-shaped cookie cutter, cut out stars from the chilled cheesecake layer and place them on a clean, parchment-lined tray.
05 - Insert a lollipop stick gently into each star. Return the cheesecake stars to the freezer for 30 minutes to firm up.
06 - Melt the white chocolate or candy melts as instructed on the packaging. If using food coloring, divide the melted chocolate into three bowls: tint one red, one blue, and leave one white.
07 - Dip each cheesecake star into the desired colored chocolate, letting excess chocolate drip off. Immediately sprinkle with red, white, and blue sprinkles.
08 - Arrange coated pops on parchment paper and allow to set at room temperature or refrigerate until fully firm.
