01 - Preheat the oven to 425°F. Line a large baking sheet with parchment paper or lightly grease it.
02 - In a large mixing bowl, toss the sweet potato cubes with olive oil, cinnamon, salt, and pepper (and maple syrup or honey, if using) until evenly coated.
03 - Spread the sweet potatoes in an even layer on the prepared baking sheet, making sure not to overcrowd the pan.
04 - Roast for 25 to 30 minutes, tossing halfway through, until the sweet potatoes are golden-brown, crisp at the edges, and tender inside.
05 - Remove from the oven. Serve hot, optionally garnished with fresh herbs or a light drizzle of maple syrup.
