01 - Peel and core the apples, then cut into thick fry-shaped sticks approximately 1/2 inch wide. Toss the apple sticks with lemon juice to prevent browning. Set up a breading station with three shallow bowls: place flour in the first, beaten eggs in the second, and mix panko breadcrumbs with cinnamon and salt in the third. Dredge each apple stick in flour, shaking off excess, dip into egg mixture, then press into panko mixture to coat evenly.
02 - Heat 1 inch of vegetable oil in a deep skillet to 350°F. Working in batches of 5-6 pieces, carefully add coated apple fries to the hot oil. Fry for 2-3 minutes, turning occasionally, until golden brown and crispy. Use tongs to transfer fries to a paper towel-lined plate to drain excess oil. Repeat with remaining batches, maintaining oil temperature.
03 - Place granulated sugar in a medium saucepan over medium heat. Cook without stirring, swirling the pan occasionally, until sugar melts and turns a deep amber color, approximately 5-7 minutes. Immediately add cubed butter and stir until completely melted. Carefully pour in heavy cream while whisking continuously—the mixture will bubble vigorously. Continue whisking until smooth. Remove from heat and stir in flaky sea salt. Let cool for 5 minutes before serving.
04 - Arrange the warm apple fries on a large platter or wooden board. Place a bowl of warm salted caramel sauce in the center. Scatter mini marshmallows, chopped pecans, chocolate chips, and graham cracker crumbs around the perimeter. Arrange fresh berries in small clusters. Generously dust apple fries with powdered sugar using a sieve.
