01 - Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
02 - In a large bowl, toss the sweet potato cubes with olive oil, cinnamon, salt, pepper, and brown sugar or maple syrup if using, until evenly coated.
03 - Spread the sweet potatoes in a single layer on the prepared baking sheet.
04 - Roast for 25–30 minutes, turning once halfway through, until the sweet potatoes are golden, tender, and lightly caramelized at the edges.
05 - Serve hot as a side dish.
