# Directions:

02 - In a large bowl, add rolled oats, nuts (if using), baking powder, cinnamon, and salt. Whisk together until evenly distributed.
03 - In a separate medium bowl, whisk together milk, maple syrup, eggs, melted butter, lemon zest, vanilla extract, and lemon juice until completely smooth and well blended.
04 - Pour the wet ingredients into the dry ingredients. Stir with a spatula or wooden spoon until just combined, being careful not to overmix.
05 - Gently fold in the blueberries using a folding motion to distribute them evenly without crushing.
06 - Pour the mixture into the prepared baking dish and spread evenly with a spatula. Sprinkle coconut sugar or brown sugar over the top if desired.
07 - Bake for 35 minutes, or until the top is golden brown and the oatmeal is set (a toothpick inserted in the center should come out mostly clean).
