02 - ½ cup natural peanut butter (smooth or crunchy)
03 - 3 tablespoons honey or maple syrup
04 - 1 teaspoon vanilla extract

07 - 1 tablespoon unsweetened coconut flakes

# Directions:

01 - Line a mini muffin tin or small silicone molds with paper liners, or lightly coat with nonstick spray.
02 - In a medium bowl, stir together the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract until smooth and fully incorporated.
03 - Spoon the mixture evenly into the prepared molds, filling each about three-quarters full.
04 - Sprinkle desired toppings over each filled mold, gently pressing them into the surface so they adhere.
05 - Place the tin or molds in the freezer for at least 2 hours, or until the bites are completely firm.
06 - Remove the frozen bites from the molds and transfer to an airtight container. Store in the freezer and enjoy directly from frozen.

# Expert Tips:

01 -
  • These come together in about ten minutes with zero cooking and a single bowl which means almost no cleanup.
  • The protein from the yogurt and peanut butter makes them surprisingly filling so you actually feel satisfied after one or two.
  • They taste like peanut butter cup ice cream but take a fraction of the effort and cost.
02 -
  • Do not skip the liners or spray because frozen yogurt bonds aggressively to bare metal and you will end up mangling these trying to dig them out.
  • Let them sit at room temperature for two or three minutes before eating because the texture transforms from icy to velvety in that short window.
03 -
  • Use the thickest Greek yogurt you can find because any excess water content will make the bites grainy once frozen.
  • Warm the peanut butter for about fifteen seconds in the microwave before mixing so it blends into the yogurt without requiring aggressive stirring.
