High Protein Frozen Peanut Butter Greek Yogurt Bites (Printable Version)

Creamy frozen Greek yogurt bites with peanut butter, perfect for protein snacking.

# What You Need:

→ Base

01 - 2 cups plain Greek yogurt (0% or 2% fat)
02 - 1/2 cup natural peanut butter (smooth or crunchy)
03 - 3 tablespoons honey or maple syrup
04 - 1 teaspoon pure vanilla extract

→ Topping

05 - 1/3 cup dark chocolate chips (optional)
06 - 2 tablespoons crushed peanuts (optional)

→ Lining

07 - Paper mini muffin liners or silicone molds

# Directions:

01 - Line a mini muffin tin with paper liners or arrange silicone candy molds on a flat tray for easy release after freezing.
02 - In a large mixing bowl, whisk together the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract until the mixture is completely smooth and free of any streaks.
03 - Using a small spoon or cookie scoop, fill each liner or mold with approximately 1 tablespoon of the yogurt-peanut butter mixture, smoothing the tops evenly.
04 - If desired, sprinkle dark chocolate chips and crushed peanuts over the top of each filled portion, gently pressing them into the surface so they adhere.
05 - Place the tray in the freezer on a level surface and freeze for at least 2 hours, or until each bite is completely firm and frozen through.
06 - Remove the bites from the freezer and allow them to rest at room temperature for 2 to 3 minutes before unmolding and serving for the best creamy texture.

# Expert Tips:

01 -
  • Each bite packs about four grams of protein, which means you can eat dessert and still feel smug about your choices.
  • Zero cooking required, so your kitchen stays cool and you stay happy.
  • They store beautifully for weeks, making them the ultimate grab and go snack when life gets chaotic.
02 -
  • If you skip the liners or molds, the mixture will stick to everything and you will end up chiseling frozen yogurt out of a pan at midnight, which I have done and cannot recommend.
  • Natural peanut butter separates, and if you do not stir it thoroughly before mixing, some bites will be oily while others taste dry and bland.
03 -
  • Taste the base mixture before you freeze it and adjust the sweetness, because once frozen the flavors mute slightly and you cannot fix it retroactively.
  • The two to three minute thaw is not optional, as eating them straight from the freezer is like biting into a delicious hockey puck.
