01 - Rinse the rice under cold water until the runoff runs clear. Combine rice, water, and salt in a medium saucepan and bring to a boil. Cover with a lid, reduce heat to low, and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork before serving.
02 - While the rice cooks, heat vegetable oil in a large skillet over medium heat. Sauté the diced onion for 2-3 minutes until softened, then add the minced garlic and cook for 1 minute. Add the ground turkey, breaking it apart with a spatula, and cook until browned and cooked through, about 5-7 minutes.
03 - Stir soy sauce, hoisin sauce, black pepper, and sriracha into the cooked turkey. Cook for an additional 2 minutes, stirring continuously to coat evenly. Remove from heat.
04 - In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth and well combined. Adjust the amount of sriracha to control the spice level to your preference.
05 - Divide the cooked rice evenly among 4 bowls. Top each portion with the seasoned ground turkey, shredded carrots, sliced cucumber, red cabbage, and green onions. Drizzle generously with Bang Bang sauce and finish with a sprinkle of sesame seeds.
