01 - Combine graham cracker crumbs, granulated sugar, and melted butter in a mixing bowl. Mix until all crumbs are evenly moistened. Press firmly into the bottom and up the sides of a 9-inch pie dish. Refrigerate while preparing the filling layers.
02 - Dissolve strawberry gelatin in boiling water, stirring completely. Add cold water and mix well. Allow mixture to cool to room temperature, ensuring it remains liquid and does not begin setting.
03 - Beat softened cream cheese until completely smooth. Add powdered sugar and vanilla extract, mixing until fully incorporated. In a separate bowl, whip cold heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture until light and fluffy.
04 - Stir diced fresh strawberries into the cooled gelatin. Gently fold the strawberry gelatin mixture into the creamy filling, taking care not to deflate the mixture.
