Collagen Fruit Jellies (Printable Version)

Naturally sweet, chewy fruit jellies boosted with collagen for a healthy, guilt-free snack the whole family will love.

# What You Need:

→ Fruit Base

01 - 1 cup 100% fruit juice (orange, mixed berries, or apple)
02 - 2 to 3 tablespoons honey or maple syrup, optional, to taste

→ Collagen and Gelling

03 - 2 tablespoons (about 20 g) grass-fed collagen peptides
04 - 3 tablespoons (about 30 g) unflavored gelatin powder

# Directions:

01 - Pour the fruit juice into a small saucepan. Sprinkle the gelatin evenly over the surface and let it sit for 2 to 3 minutes to bloom.
02 - Place the saucepan over low heat and stir constantly until the gelatin dissolves completely. Do not allow the mixture to boil.
03 - Remove from heat. Add the collagen peptides and honey or maple syrup if using, stirring well until fully combined.
04 - Pour the mixture into silicone molds or a small baking dish lined with parchment paper.
05 - Refrigerate for at least 2 hours or until the jellies are completely firm and set.
06 - Remove the jellies from the molds. If using a baking dish, cut into bite-sized squares with a paring knife.
07 - Transfer to an airtight container and store in the refrigerator for up to 1 week.

# Expert Tips:

01 -
  • These little jellies give you a collagen boost without choking down a gritty smoothie.
  • Kids think they are candy and you get to feel smug about serving something nutritious.
  • The recipe uses five ingredients and one pan, which is my kind of math.
02 -
  • If the mixture boils, the gelatin loses its grip and you end up with sad juice soup instead of bouncy candy.
  • Gelatin needs those quiet blooming minutes before heat touches it, so do not rush that step.
03 -
  • Sprinkle gelatin from high up and slowly so it distributes evenly instead of clumping into wet islands.
  • Let the molds sit uncovered in the fridge for the first thirty minutes so condensation does not pool on top and make the surfaces slippery.
