01 - In a medium bowl or mason jar, add the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, lemon zest, lemon juice, and vanilla extract. Stir thoroughly until every ingredient is evenly distributed.
02 - Gently fold the blueberries into the oat mixture using a spatula or spoon, taking care not to crush the berries.
03 - Seal the bowl tightly with plastic wrap or secure the jar lid. Place in the refrigerator and chill for at least 6 hours or overnight to allow the oats to absorb the liquid and soften.
04 - In the morning, remove from the refrigerator and give the oats a good stir. If the mixture is too thick, add a splash of milk and stir until you reach your preferred consistency.
05 - Divide between two bowls or jars. Top with chopped nuts, additional blueberries, and a sprinkle of lemon zest. Serve chilled.
