Blueberry Lemon Overnight Oats (Printable Version)

Creamy oats soaked overnight with blueberries, lemon zest, and a touch of maple—an easy, grab-and-go breakfast.

# What You Need:

→ Oats Base

01 - 1 cup old-fashioned rolled oats
02 - 1 cup milk (dairy or plant-based)
03 - 1/2 cup plain Greek yogurt
04 - 1 tablespoon chia seeds
05 - 1 to 2 tablespoons maple syrup or honey

→ Flavor & Fruit

06 - 1 cup fresh or frozen blueberries
07 - Zest of 1 lemon
08 - 1 tablespoon fresh lemon juice
09 - 1/2 teaspoon pure vanilla extract

→ Optional Toppings

10 - 2 tablespoons chopped nuts (almonds or walnuts)
11 - Extra blueberries
12 - Additional lemon zest

# Directions:

01 - In a medium bowl or mason jar, add the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, lemon zest, lemon juice, and vanilla extract. Stir thoroughly until every ingredient is evenly distributed.
02 - Gently fold the blueberries into the oat mixture using a spatula or spoon, taking care not to crush the berries.
03 - Seal the bowl tightly with plastic wrap or secure the jar lid. Place in the refrigerator and chill for at least 6 hours or overnight to allow the oats to absorb the liquid and soften.
04 - In the morning, remove from the refrigerator and give the oats a good stir. If the mixture is too thick, add a splash of milk and stir until you reach your preferred consistency.
05 - Divide between two bowls or jars. Top with chopped nuts, additional blueberries, and a sprinkle of lemon zest. Serve chilled.

# Expert Tips:

01 -
  • You wake up to breakfast that is already done, like a gift from your past self who had it together the night before.
  • The lemon and blueberry combination tastes like a summer morning wrapped in a jar, bright and faintly sweet without being heavy.
02 -
  • Do not skip the overnight rest, four hours is not enough and the texture will be gritty and unsatisfying, trust the process.
  • If using frozen blueberries they will release their juice and turn the entire jar a lovely shade of violet, which is not a flaw but a feature.
03 -
  • Use a wide mouth mason jar for easy stirring and eating, narrow jars turn into a frustrating struggle by morning.
  • Layer the toppings between the oats and the lid rather than mixing them in, so nuts stay crunchy and fresh until you eat.
