03 - 1 cup raspberries
04 - 2 tablespoons sugar (optional, for macerating)

→ Cake Layer

05 - 8 ounces pound cake or sponge cake, cubed

→ Vanilla Cream

06 - 1 and 1/2 cups heavy cream
07 - 8 ounces mascarpone cheese or cream cheese, softened
08 - 1/3 cup granulated sugar
09 - 1 teaspoon pure vanilla extract

→ Custard

10 - 1 and 1/2 cups vanilla custard or prepared vanilla pudding

→ Garnish (optional)

11 - Fresh mint leaves
12 - Extra berries

# Directions:

01 - In a medium bowl, combine strawberries, blueberries, raspberries, and sugar if using. Gently toss and set aside for 10 minutes to allow the juices to develop.
02 - In a large mixing bowl, whip heavy cream to soft peaks using an electric mixer or whisk. Add mascarpone or cream cheese, granulated sugar, and vanilla extract. Continue whipping until the mixture is smooth, thick, and well blended.
03 - If making vanilla custard from scratch, prepare following your preferred method and allow to cool completely before use.
04 - Arrange half of the cake cubes in the bottom of a trifle bowl or individual serving glasses, creating an even layer.
05 - Spoon half of the sugared berries and their juices evenly over the cake cubes.
06 - Evenly spread half of the vanilla custard or pudding over the berry layer.
07 - Smooth half of the prepared vanilla cream mixture over the custard.
08 - Repeat the process with the remaining cake cubes, berries and juices, custard, and vanilla cream, ensuring distinct layers.
09 - Garnish the top with additional berries and fresh mint leaves as desired.
10 - Refrigerate the assembled trifle for at least 1 hour to allow the flavors to meld before serving.

# Expert Tips:

01 -
  • This is the kind of showy, generous dessert that looks like you fussed for hours, but it's far easier than it seems.
  • Each bite is a mix of pillowy cream, juicy berries, and soft cake—a combination that never lasts long on the table.
02 -
  • Laying the cake cubes too close together means the juices can’t spread and some bites end up dry—it took one mishap to learn to let them breathe.
  • Leaving enough time for chilling, even when hungry guests are waiting, allows everything to meld into harmonious, spoon-ready bliss.
03 -
  • Let the berries mellow in sugar until they glisten and release their juices—it makes all the difference to the final dish.
  • Layering in small glasses instead of one big bowl means easier serving and makes everyone feel special.
